Summer Mocktails: Easy Watermelon Mimosa
/The summer heat is here, and one of the best ways to stay cool is munching on watermelon. It’s so juicy and hydrating and fun to eat. It’s also a great fruit to make summer mocktails with, whether you’re into mocktail margaritas or something more simple.
This mocktail mimosa was inspired by some leftover watermelon and a bottle of Oddbird Blanc de Blanc open in the fridge. Mimosas are great with any type of juice, but watermelon juice? Oh my!
Benefits of watermelon
Watermelon has a high water content, but it’s also packed with nutrients. Watermelons are rich in vitamins A, C, and B6. They also contain significant amo\unts of antioxidants like lycopene and beta-carotene, which all play a crucial role in maintaining health.
The biggest benefit of consuming watermelon is its high water content. A typical 2-cup serving of watermelon is 92% water, making this melon an excellent source of hydration, particularly during the hot summer months. Watermelon also contains the electrolytes potassium and magnesium, which help regulate fluid balance, muscle contractions, and nerve signals. How to make watermelon juice
If you’ve never made watermelon juice before, this is going to be a game changer. You can use this in a watermelon agua fresca, in this recipe, in spicy margaritas (cocktail OR mocktail) and lots of other drinks. It’s the ideal summer juice and because it’s seasonal, make it now while you can and then freeze it in cubes for the fall or winter.
Preparation
Cut up about 2 cups of watermelon into cubes or chunks.
Add to a blender and blend on high until pureed.
Put a big mesh strainer over a pitcher or carafe and slowly strain out the juice. You’ll have to press down on the watermelon pulp quite firmly so use a wooden spoon, and make sure the strainer is sitting snug on top of a sturdy bowl.
Once strained, you can leave in the fridge for a day or two, but warning that the juice will start separate if left too long at room temperature. Give it a good whisk if that starts to happen!

a splash of fresh lime juice
4 oz chilled Oddbird Blanc de Blanc non-alcoholic sparkling wine, or other low-sugar non-alcoholic sparkling wine
Preparation
Add the watermelon juice and lime juice to a glass
Stir to combine
Top with sparkling wine
Garnish with a watermelon slice
