Pear is an underutilized winter flavour in cocktails, and it pairs beautifully with spices and sparkling wine. Using an easy ginger syrup, this simple and light mocktail recipe is easy enough for one, but can also be batched for entertaining. The delicious ginger syrup can be reserved for other drinks and for adding to tea if you’re looking for a cozy sweetener.

Fool-proof ginger syrup for your mocktails

Ingredients

1/2 cup sugar
1/2 cup water
1 piece of ginger (about 3-4 inches), peeled & cut into rounds

Directions

  1. Add everything to a small saucepan on medium-low heat, stirring occasionally to dissolve the sugar.

  2. Once simmering, remove from heat and let steep for 30 minutes.

  3. Strain the syrup into an airtight glass jar or bottle.

  4. Once cooled, the syrup can be stored in the refrigerator for up to two weeks.

And now, the fun part - making your pear ginger mocktail!

Ingredients

1 oz ginger syrup*
½ oz lemon juice
½ oz pear juice
1 full dropper of All The Bitter alcohol-free Aromatic Bitters
2-3 oz Noughty Sparkling Rose

Preparing your non-alcoholic cocktail

  1. Add ginger syrup, lemon juice and pear juice to shaker with ice and shake until chilled.

  2. Strain into a coupe glass and top with sparkling wine.

  3. Garnish with a pear fan or candied ginger.
