Dry January: Peaches & Dreams Non Alcoholic Cocktail
/It's cold outside, so we’re doing some daydreaming about sunny summer Sundays with this beautiful cocktail. It’s made with Silver Swallow Luxury Kombucha, the the world’s first luxury kombucha made in Canada.
Silver Swallow is made from an ultra rare white tea and has soft gentle bubbles layered in flavours of honey and clover flower. It’s perfect on its own for an elegant dinner, or in this zero proof cocktail we call Peaches & Dreams.
The recipe is slightly more complicated than some of the other recipes we’ve shared this month. If you’ve never made a simple syrup before and are not sure you want to try making the peach vanilla syrup here, you can buy Monin or Torani peach syrup and add a dash of vanilla extract for the same effect. Either way, it’s a beautiful combination of white tea, peaches and vanilla that transport your taste buds to a warm summer afternoon in the garden.

Ingredients
Syrup:
3/4 cup frozen peaches
1 vanilla pod, sliced open lengthwise
1/2 cup water
1/2 cup sugar
*You can replace the homemade syrup with Monin Peach syrup and a 1/4 tsp of vanilla extract if desired
1/2 tsp Apple Cider Vinegar

Directions
Peach Vanilla Syrup:
Bring the water, sugar and peaches to a boil in a small pot, then reduce the heat to low and add the vanilla pod. Simmer for 10 - 15 minutes, removing the vanilla pod after about 5-6 minutes.
Turn off the heat, and let cool for 2 - 3 minutes before straining into a glass jar. There will be small black particles in the syrup from the vanilla, but they will settle to the bottom once the syrup cools. Set aside the cooked candied peaches left over in the pot.
Building Peaches & Dreams:
Add a few of the candied peaches to the bottom of a champagne flute.
Add in 2 tbsp of Peach Vanilla Syrup and the apple cider vinegar.
Top with Silver Swallow Kombucha
