Easter Mocktail: A sparkling Sorbet Float

Spring is here, Easter is just around the corner!

This elevated non-alcoholic drink was inspired by season three of Bridgerton because feels like something the Ton would nosh on at an Easter celebration. It’s a well known fact that Regency-era hosts were gaga over champagne and would serve it at any occasion, so that was our cue to crack open those non-alcoholic sparkling rose bottles.

This mocktail is a non-alcoholic champagne sorbet float, that can be customized as an elevated option for adults or a family-friendly mocktail for kids. This elegant recipe is both a drink and dessert and is perfect for those special occasions when you want to celebrate with something decadent and different. Made with non-alcoholic sparkling rose, or sparkling grape juice, and luscious blueberry sorbet, this mocktail dessert drink will definitely impress your guests.

Ingredients

Our non-alcoholic champagne sorbet float recipe calls for just a few simple ingredients:

  • Non-alcoholic sparkling rose: Choose your favorite brand of non-alcoholic sparkling rose for this recipe. Its bubbly, tart and fruity flavor will complement the blueberry sorbet perfectly. We used Prima Pave sparkling rose. We didn’t like this non-alcoholic bubbly on it’s own - it was a little too grape juicy for us - but it was truly a perfect option for this float because it’s juicy flavours paired so nicely with the blueberry.

  • Family/kid friendly version: sparkling white grape juice is the best pairing with sorbet for a kid-friendly option; low-sugar ginger ale is a fun alternative too.

  • Blueberry Sorbet: Opt for high-quality blueberry sorbet for the best flavor and texture. You can either make your own or purchase it from your local grocery store. We recommend just buying it - making sorbet is tricky and messy.

  • Fresh Blueberries: Juicy berries add a burst of freshness to the sorbet float and make for a beautiful garnish. Plus…FIBER and VITAMINS! (For women in perimenopause: berries help with balancing hormones, so this is a no brainer dessert!)

  • Lemon Slices: Thin slices of lemon add a touch of citrusy brightness to balance the sweetness of the sorbet and sparkling rose.

Instructions

  1. Chill the non-alcoholic bubbly (whichever version you’re using): Begin by chilling a bottle of non-alcoholic sparkling rose in the refrigerator for at least 2 hours. This ensures that it's cold and ready to be served and won’t melt the sorbet upon contact.

  2. Prepare Serving Glasses: While the sparkling non-alcoholic rose chills, place your serving glasses in the freezer to chill. Chilled glasses will help keep the sorbet float cold for longer.

  3. Scoop Sorbet: Using a spoon or ice cream scoop, scoop out balls of blueberry sorbet and place them on a baking sheet lined with parchment paper. ****Keep them in the freezer until you're ready to assemble the floats****. Don’t skip this step. Otherwise the balls will melt as soon as you pour in the sparkling wine.

  4. Assemble the Floats: Once everything is chilled and ready, take the serving glasses out of the freezer. Place 2-3 blueberry sorbet balls in each glass, then slowly pour the chilled non-alcoholic sparkling wine or sparkling grape juice SLOWLY over the sorbet.

  5. Garnish: Add a few fresh blueberries, a sprig of mint, and a slice of lemon to each glass for an extra touch of elegance and flavor.

  6. Serve Immediately: Serve the non-alcoholic sparkling sorbet floats immediately to enjoy them at their best. The combination of frozen sorbet and bubbly sparkling rose is simply irresistible!
