A winter cocktail with Sobrii non-alcoholic gin

Sobrii 0-gin is truly one of only a few non-alcoholic gins that we consider great. Sobrii was the first non-alcoholic gin on the market in Canada and it continues to be one of the bottles we reach for the most and refer people to the most. Sobrii 0-gin works well in all types of non-alcoholic cocktails from easy to complex, including this intermediate mocktail recipe using sage, honey and non-alcoholic red wine. 

What is Sobrii non-alcoholic gin? 

Sobrii 0-Gin is a non-alcoholic gin alternative made in Stratford, Ontario. It is designed to mimic the flavours of traditional gin but without the alcohol content. Its distinct flavour and aroma come from the ginseng, juniper, anise and other botanical elements in its formula. 

What’s unique about Sobrii 0-gin? 

We love Sobrii 0-gin because it’s so hearty - it has all the great herbal notes of an excellent gin, and it stands up in a cocktail whether it’s shaken or stirred. Sobrii-0 has its own distinctive identity and is very unique amongst a stadium full of new players making ‘non-alcoholic gin alternatives’. 

The origin story of this recipe came about because we had some tasteless plums, and were looking for a replacement for the colour and sweetness. Necessity is the mother of invention, and an open bottle of non-alcoholic wine on the counter led to this beautiful marriage of sweet, savoury and slightly sour where Sobrii 0-gin truly shines. How to Make Honey Sage Syrup

Honey sage syrup adds a very sophisticated note to your cocktails and is a great counterpoint to gin. It’s sweet and herbal and there are a multitude of recipes on the internet about how to make it. Our sage advice is don’t cook the sage leaves. Put them in the warmed honey syrup, let them simmer for about 30 seconds and remove from heat. Let the sage oils infuse into the honey while it cools for an hour. 

Ingredients

Honey Sage Simple Syrup

⅔ cup water

⅓ cup honey

8 sage leaves, torn in half

Preparation

To make a honey sage simple syrup

  1. Heat the water on the stove, and as it warms, add in the honey 

  2. Stir until the honey has totally dissolved and the water is starting to simmer, but don’t let the mixture come to a boil

  3. Add in the sage leaves and turn the heat down to low

  4. Let it simmer on low for a minute, while gently stirring to integrate the sage

  5. Remove from the heat and cover to infuse for 30 minutes or longer until the flavour is infused to your liking

  6. Strain into a syrup bottle and refrigerate

Which non-alcoholic red wine to use

Many non-alcoholic wines can be too thin, but there are a handful of fuller bodied red wines that we like. This recipe only uses a small amount so it’s fine to use whatever bottle (or can) you have open but preferably a juicy fruit-forward wine like Noughty Rouge, JP Chenet Cabernet Shiraz or Oddbird GSM. 

Pulling it all together 

Non-alcoholic cocktail ingredients

1 ¾ oz honey sage syrup

2 oz Sobrii 0-gin

1 oz non-alcoholic red wine

Pinch of salt

Instructions

  1. Add all ingredients to a mixing glass with ice and stir to chill for about 10 seconds.

  2. Strain into a chilled coupe glass - vintage is best as this is only a 4 oz drink! 

  3. Garnish with a sage leaf.

Ingredients

Honey Sage Simple Syrup
  • ⅔ cup water
  • ⅓ cup honey
  • 8 sage leaves, torn in half
Non-alcoholic cocktail
  • 1 ¾ oz honey sage syrup
  • 2 oz Sobrii 0-gin*
  • 1 oz non-alcoholic red wine
  • Pinch of salt

  6. Strain into a syrup bottle and refrigerate
Putting it all together
  1. Add all ingredients to a mixing glass with ice and stir to chill for about 10 seconds.
  2. Strain into a chilled coupe glass.
  3. Garnish with a flocked sage leaf.
